I'm sure that some of you think you hate eggplant, and that others among you would eat it with every meal like I would. Here's a recipe I would never have used if I didn't have six eggplant in my fridge, and which turned out to be excellent.

Have you ever tried Aubergine/Eggplant paté/dip? Toast one over an open flame (I use my gas burner) until it's all charred and floppy. Peel away skin, pull stem off, and stick it in a blender with olive oil, lemon, garlic, pepper and a little fresh rosemary if you have any. Blend the fuck out of it then nom with crudités/pita chips/fingers.

EGGPLANT DIP. We make this thing called Texas Caviar that's essentially a really rustic paté. Some people (weirdos) put beans in it, which I don't understand, but without the beans I will eat it out of a bowl like breakfast cereal.
