Cheesy Hash Brown Casserole

Most of you know I don't like to cook, but here is one of my favourite lunches to make on the weekend. It combines two of my favourite foods - cheese and green onions - and melts into a delicious ooey-gooey cheesy casserole.

Warning: you don't want to make this if you're starving, as it takes an hour to bake!

Ore-Ida now sells frozen hash-brown potatoes that come with diced green bell peppers in them already. :-)

I have a similar recipe. We add cubed Kielbasa sausage and a mixture of eggs-milk. When we have several guests visiting, we usually assemble it the night before, then refrigerate overnight. In the morning, pop it into the oven for 45m to an hr and you have most of breakfast done.
