So what do you guys think: Shannon has been wanting me to make a Wee Heavy (a very heavy Scottish ale) for months, but I also want to try more complex, lighter beers--a Belgian Saison has been sounding really nice lately. Hmm...it's scary to come between Shannon and her beer ideas, but I think a lighter ale is better as it gets warmer and more Spring like and maybe do the heavy ones in Winter.

Right you are Dragan--the thing about the heavy, dark beers is that they need to age for a long time. So if I made a wee heavy now, it'd be absolutely perfect in a year. Actually, the saison would only get better with long-term aging, so I'm not exactly sure which we'd be able to drink first. You see how difficult this is!?

ake the more complex one, that way you can devlop your skills. Make the Wee Heavy after that so you can age it for next winter/new years.

I think the Wee heavy might actually be more difficult to make--the saison is just complex in terms of ingredients and flavors, that's all. I can make the saison from a kit, but I'd have to get all my own stuff to make the wee heavy. But in principle, I think you may be right.
