it should surprise no one that the vast majority of the "nearest books" are playscripts. (my desk chair is immediately in front of a bookshelf, so there are multiple "nearest books")

And playscripts rarely have 123 pages. So, instead, the first book I encountered with enough pages to follow the instructions:

How To Cook Everything, by Mark Bittman

From the recipe for Fried Chili-Spiced Clam Salad

"When the oil is hot - a pinch of cornmeal will sizzle - dredge the clams and add them, a couple at a time, to the skillet. Raise heat to high and cook until golden, turning once, about 2 minutes total. Drain the clams on paper towels and toss the greens with the dressing."

heh - and if I had a copy of THAT script in my apartment currently, it would mean I'm a much more important director than I thought I was.
