So I've been taking my lovely OnetoOne classes and loving most every minute of them (and it doesn't hurt that I have a baby crush on my usual instructor) but I can't for the life of me figure out how to resize a picture.  I can crop it and I know in the crop you can use a custom size, but what I really want to do is take my crop or my original

In iPhoto? The resize happens during the Export to a new file part. File | Export | Scale Images No Larger Than.
