Getting good at cooking has been a long-standing ambition of mine. I have a very small retinue of dishes that I can cook to a consistently high standard. Thai curry, thankfully, is one of them

Were you taught as a kid? I would say one of my parents major failings is that I wasn't taught to cook at home. I meant, my mom thinks she taught me to cook but frying a chop and heating up some frozen peas ain't cooking.

Add a bit of cornflour/cornstarch if your sauce is too runny - Seamus
