What I actually want to say is: both b) and c).

When I notice a difference, I try to do things the way they do. But I'm sure there are lots of things that aren't important to me, so they don't rise to my notice, and then I do things the way I do them. For example, your forks example is something I wouldn't necessarily notice.

Also, it depends on how comfortable I am with the person and how close I feel to them. I like my close friends to make themselves in my home: help themselves to beverages, for example. As a result, when I feel close to someone, I tend to do the same level of making myself at home in their homes.

Under someone else's roof, one follows that person's rules. My in-laws insist on shoes at the table. Why? Dunno. You can be barefoot in the house any other time, but you wear shoes during meals. So that's what we do. No question about it. It's how it's done there, so, when there, do that.
