Technically, Christmas itself doesn't have much to do with the birth of Christ; originally it was a festival to celebrate the turning of the sun, and the fact that the days would get longer and brighter. This is where the evergreen comes from: It says green all year and symbolizes life and the promise of a new spring.
The church tied it to the birth of Jesus much later -- despite the fact that there's absolutely no way that Jesus could have been born anywhere near that time of year. (Joseph and Mary wouldn't have been able to travel through Jerusalem in the winter, and any shepherds who'd go out with their sheep in December would be completely off their rocker...) But it was a convenient way to keep the popular 'heathen holiday' and give it a Christian meaning, so the church made it official that December the 25th was to be considered the day of the birth of Jesus.
