To take just one tiny bit and mess with it, I can very much see Dean ending up mediator between demonkind and humankind or not necessarily even the demons but something bigger, maybe something that the demons actually spring from, by going through some sort of trial. And getting stuck with it, and bitching about it. I can also see Sam and kids liking him being either the bridge between or some sort of force of chaos that causes the world to be in danger and Dean finding himself having to decide between saving the world or saving Sam (I'm just babbling).
You're not babbling, actually. If I'd elaborated a little bit more on Mithraism, you'd see that that was the philosophical significance tacked on to his role as mediating between the heavens and earth. The heavens represented the supernatural (gods and so forth) while the earth symbolized humankind. You totally nailed it, dude.
