Have you considered substituting ground turkey instead? In my experience it cooks a lot more like ground beef.

I did but all the of the ground turkey packages I saw contained flavoring and I wasn't sure how that would effect the taste.

Good call. I use the unflavoured stuff in a lot of my cooking these days as a beef substitute.
