Anything that is addicting obviously has addictive properties, so I don't see why those two words can't be used interchangeably.

I also don't see why "evoking" and "evocative" can't be used interchangeably.

"Ensure" and "insure" are interchangeable only in particular contexts.

Perhaps I should elaborate a bit more on my first part.

Anything that has addictive properties can be considered addicting.
Anything that is addicting has addictive properties.

Addictive is an adjective, and addicting is a verbal adjective. To me, they seem to be pretty much the same word, just coming from two different forms of the same root word.
