I've had the opportunity to try Ethiopian on a couple of occasions. First place wasn't so good but I gave it another shot at a restaurant in DC and loved it.

I'd love to learn how to cook the stuff. :D

There's an Ethiopian restaurant only two blocks north of where I love. I don't know how I haven't tried it yet.
