(I would love to learn how to create these compositions myself, so if anyone knows how, please let me know)

Quartz Composer comes with the dev tools, and is great fun to play around with, and lets you string things together in a pipeline graph-ical way. It's pretty snazzy actually.

One recent movie with a prominent snazzy UI was Iron Man. I liked the HUD in the suit, but his computer's morning call with a weather report and other goodies was great.

Thank you Mr. Anonymous, whoever you are. I'd forgotten about IronDowneyJr. I should have remembered, since I've just bought it though. I think I'll go and ogle some movie UIs now. :)
