I think the difference is that most people assume that artists enjoy such work, whereas very few people enjoy grinding out math problems and/or papers.

Sometimes, the classwork is enjoyable, but more often than not, it isn't what you want to do, thus not any better than math problems. Then there's the added frustration that instead of being able to live off of making art, most artists have to take a less desirable job in the field to survive.
