I just discovered my 5 lb bag of potatoes that I bought a couple of weeks ago and hid in a cool, dark spot. I need to cook them all before they go bad. Those bags of potatoes always seem like a good idea when I get them. Help!

Oven baked potato chips:

Slice potato, leave skins on.
Place on cookie sheet
put a dab of olive oil on each slice.
Heat at 350 until a crispy, chip-like consistency results
Allow to cool.
eat greedily.

This is what my mom would make when we didn't have much laying around the house. It makes a thin potato soup that is great for lunch and it even reheats well.

Cut 2-3 potatoes into bite-sized pieces (I usually remove the skins) and chop half a small onion. Place potatoes and onion in a saucepan and cover completely with water. Bring water to a boil and cook until potatoes are very tender. Turn heat to low and add about 1/2 cup of milk and a tablespoon or two of butter. Heat until warm throughout, add a generous portion of salt and some pepper and enjoy!

If you wanted a thicker soup, you could always process some of the potatoes at the end.

I'm not positive about how much milk I usually add, it's more of a "add until the soup takes on a nice creamy color" kind of thing. So if it looks kinda thin, add some more milk.
