I didn't get to watch 300 in IMAX...
But Ben and I sat in the second row so it seemed kinda IMAX-ish.

imax wasn't all that special. the screen IS bigger but I don't think you benefit from the screen size a lot unless it's one of those 360 degree theatres. But the sound is definitely a lot better.
