I took a quasi-sick day yesterday, also known as a mental health day. I think I'm getting to the point of job hunting, but that story has nothing to do with baking. Needless to say, I did not post this yesterday because I needed a complete break from everything. Wow, that looks beautiful and delicious!!! I love gingersnaps!! Sounds like the dessert for me, especially since it's so easy yet sophisticated looking. =)

Exactly! I've always found crumb crusts to be a godsend because all you have to do is grind up cookies, melt butter over them and press into the pan. None of that using a dough cutter or rolling pin business. And if you like all of the ingredients, you should definitely make it! It was delish.

(I think it would also be wonderful with a graham cracker or oreo crust and strawberries or mixed berries on top!

You're so right! Crumb crusts rock! I also meant to ask what mascarpone cheese is. Can you just buy it at any grocery store?

Mascarpone is a soft cheese used in a lot of desserts and I've found it at both Publix and Whole Foods. I'm not sure what stores you have up there, so I don't know where to recommend. (I haven't checked Winn Dixie.)

It's usually sold in a small flat 8-oz. tub (like a cream cheese or butter tub) and in Publix, they keep it in the display case that's always near the deli where they have a bunch of imported and specialty cheeses (not where all of the sliced and shredded cheeses are).

If you can't find it, you could try calling the store you usually shop at and to see if they carry it. I think most people pronounce it "mars-ca-pone" even though it's not spelled that way.

Seriously, I will mail you the gingersnaps if you want them. I have a whole unopened bag.
