Lemon Olive Oil Cake.
Mmmmmmmmmm. So easily could have been vegan, but I do love my eggs.
Star line up.
Not shown: flour, baking powder, baking soda, sugar.
Sugar + eggs.
Sugar + eggs, battling it out on high for five minutes.
Yogurt + zest (not finely grated).
My best olive oil (like the entire fucking baby jug of it, btw).
Flour-salt-powder-soda.
Properly whisked.
Add it all together, and what do you have?
(Answer: something that should be in a springform! But MacGuyvering it as such works as well.)
Bake that shit. Sans springform, lower temp for glass baking, it was more like seventy (excrutiating) minutes.
Remove from oven.
Remove from pan.
Let cool. Flip over. Sugar if you'd like.
Eat. (Which in my case really barely involved the "let cool" part because mmmmmmm lemony).
Bonus points for with a cup of Earl Grey.
So, you've just zested three huge lemons. What do to with them??
Make blueberry lemonade iced tea. Yes.
8oz. frozen blueberries + 1/4 cup lemon juice (which for me was 2.5 of the lemons).
Boil. Smoosh berries. Boil. About ten minutes.
Strain.
Make mess.
Boil 2 cups of water, add in some teabags. I used two of my lemon verbana and some of my Kusmi No. 24.
Brew until reeeeeeally dark (or don't, whatever, about five minutes is good, but this is already going to stain your teeth to hell and back, so come on, let it steeeeep).
Add blueberry/lemon juice, boil a bit. Add ~1/3 cup sugar.
Drink it warm, let it cool, whatever. I did a little bit of both.
And what to do with those smooshed delicious blueberries?
Add some powdered sugar (optional) and some honey (mmmm), make toast, butter toast, load on honey-lemon-blueberry pseudo-jam (preferrably while still warm).
1/2 a lemon left, perfect for cleaning up all those blueberry stains on the countertop, and all the dishes.
Waste not, want not.
