See this adorkable human cooking on the beach? His name is Luke Nguyen, a Vietnamese-Australian chef. He was born in Thailand while his family was immigrating to Australia. In addition to being the owner of Red Lantern in Surry Hills, Sydney, he is also the author of several cookbooks as well as television host.
He is also a total lady charmer. Little girls like him, young ladies like him, old ladies like him, your mother may or may not disown one of her children in favor of him. COUGHSCOUGHSCOUGHS
Luke Nguyen's Vietnam
He is perhaps best known for his cooking series, "Luke Nguyen's Vietnam," which depict his travel through Vietnam as he explore the local region cuisine and interact with the locals. I will be sharing links to some recipes he have shown in the hope of spreading Vietnamese cuisine to others.
I highly recommend watching his shows, because it's a wonderful representation of Vietnam. The way Luke converses with the local is really sincere and sweet. And because I also enjoy watching this adorkable man cook on a rowboat as tourists and locals gawk at him.

Luke Nguyen's France
Look at this bastard with his new show Uh, I mean, Luke has a new show~! As the title suggests, in his new show, he is traveling in France, learning about how the French influenced Vietnamese cuisine as well as French regional cooking.

Recipes
I'm recommending Vietnamese recipes I am familiar with that Luke has done a demonstration of, but you're free to check the recipe pages for other recipes:
Luke Nguyen's Vietnam recipes,
Greater Mekong recipes.
Nước Mắm Chấm (Vietnamese Fish Sauce)
Đậu Hũ Sốt Cà (Crisp Tofu in Tomato Sauce)
Canh Hải Sản Măng Chua (Seafood & Pickled Bamboo Sour Soup)
Bánh Cuốn Nóng (Handmade rice noodles filled with pork and wood-ear mushrooms)
Bò Xào Xà Lách Xoong (Warm beef and watercress salad)
Bánh Hỏi Tôm Nướng (Grilled Shrimp with Bánh Hỏi)
Gà Xào Sả Ớt (Lemongrass chilli chicken)
Bánh Mì Chả Lụa (Pork terrine baguette) *
* You can buy
chả Lụa at your local Vietnamese grocery store. Typically it's sold wrapped in banana leaves, and can be sold frozen or fresh.
Or,
you can just make your own. It's not that hard and you can actually guarantee the freshness of this.
Where to Watch
While various clips of the cooking segments are available on his shows' websites, watching the entirety is obviously best. Currently "Luke Nguyen's Greater Mekong" is airing repeats on the
Cooking Channel every Saturday at 9:30 a.m. (Central).
In addition, it seems there are a few videos floating around on YouTube, particularly the "bonus recipes" that aren't shown in TV airings. Again, it's not the whole episode, but better than nothing. You can just search "Luke Nguyen" on YouTube and watch at your leisure. I'll leave a sample video below:
