The walking tour of the downtown area is affordable, only takes a couple hours, but is incredibly informative, and you get to see a lot of the city that you'd never notice.
The Japanese Garden is lovely (I'd recommend the rose garden in the late spring/early-mid summer) as is the huge park that contains them both and the zoo. It's a little out of the way (take the light rail to it), but the station that's something ridiculous like 500 feet underground is kinda cool.
There is a Chinese garden that is downtown, and it's gorgeous as well, not to mention in Chinatown, which is always fun to roam though.
Paragon has the most amazing grilled cheese sandwich ever, which makes it a fabulous lunch option.
