I need new menu ideas. I keep making mushroom and artichoke pasta over and over again. It's good, but Greg is going to kill me if we don't get a little variety soon.
the pasta is wicked easy, and this isn't exactly a recipe.
cook your fav pasta (mine's ziti). stir-fry OR boil veggies you like (we use broccoli, mushrooms, carrots, and onions, but anything you like, any way you like to prepare it). i usually add either homemade or store-bought (usually store-bought) sauce to the veggies once they're done cooking and drained, and let it heat up. then you add the pasta and the veggies + sauce to a baking dish.
SHRED SOME SMOKED MOZZARELLA. you don't need much. it's a very strong taste. we like to use a big-ass blend of cheese, and we get regular mozz, asiago, parmesan, romano, shit like that, and shred that and put that on top too. mix it up if you want so that the cheese melts in evenly. bake it at 400 degrees for 20 minutes.
don't forget to preheat that oven, now. and watch it the first time to make sure it doesn't burn.
i'll comment the other recipe separately 'cause i don't think it will all fit as one comment.

this is an actual recipe from my mom.
Take 1 loaf of Italian bread, cut into cubes. Add a few tablespoons of olive oil , salt, pepper, Italian seasonings, garlic powder, mix well and keep aside.
Saute scallions, cut carrots, broccoli, cauliflower, zucchini, red and green peppers (any preferred veggies) with oil, salt and pepper. When done, remove from pan and add to bread cubes. Saute firm tofu that is cut into small cubes. Add to bread and veggies.
Transfer to a baking tray.Top with grated mozzarella and cheddar cheeses. Bake at 400 for ½ hour.
(we also usually add smoked mozzarella to this as well, because we are cheese fiends.)
