Delightful soup

I made vegetable soup tonight. I tried to recreate the soup they serve at our local family restaurant. Mine came out quite delicious, though not precisely like the restaurant's.

My daughter works there as a server. You would think she'd agree to steal the recipe for her beautiful mother, but no!

Carrabba's has the most amazing minestrone soup that I haven't duplicated. I'm hoping your recipe would be similar.

We'll see. This recipe will have no beans or shell pasta in it--it really is straight vegetable soup.

If it's a chain restaurant, sometimes you can Google the recipe, like "Olive Garden minestrone soup recipe", and get other people's takes on it.

I once worked as a server in an upscale Italian restaurant, and frequently worked the time between lunch and dinner alone with just the the sous chefs. Once, I came across the chef's notebook in the kitchen, so I copied a few recipes I particularly loved. Your daughter really needs to get proactive on this issue! ;-)

Oh, yeah. It was a spinach-prociutto cream soup. One of the sous chefs showed me how to make the spaghetti aglio e olio. I figured out how to make tortellini d'oro by following similar recipes and adjusting it. I'm especially proud of that one, because that was sheer detective work, and I managed to recreate the taste.

After I read your question, it hit me: I forgot tomatoes! I think they include a certain amount of sliced, canned tomatoes. Next time ...
