I miss them when I'm in MA, too! Though they at least have east coast-style Mexican food in Northampton (with bizarre things like grilled zucchini in their burritos - I like grilled zucchini, but it still doesn't belong in a burrito).
I haven't seen any Mexican food here besides over-priced fajita kits in the grocery store. I can make fajitas without a kit, thanks.
And I could take a train to (the plain in) Spain (especially if I had more money), but there aren't actually that many similarities between Mexican and Spanish food. There are similarities, but... it's just not Mexican food.
They have Swiss food, they have French food, they have Chinese food, they have Thai food, they have Indian and Pakistani food, they have Egyptian and Lebanese food, they have Italian food, they have Japanese food, they have Greek food, they have Ethiopian food... they have almost everything that isn't Mexican food.
Swiss food is definitely influenced by the foods of its neighboring countries (France, Germany, Italy... and also Liechtenstein and Slovenia, but maybe not those as much, not that I could tell you what those cuisines are like, and they're on the other side of the country from me, anyway) depending on where in Switzerland you are. Some of the best know dishes are fondue and raclette, though every region has its specialties. As you can probably tell from those dishes, there's a lot of dairy in Swiss food (and not just cheese - though historically it was easiest to store dairy as cheese), since there's such a big dairy industry here.
I mostly cook for myself anyway, since it's cheaper, but I've been consuming so much cheese since I've gotten here. It's so good, though!
