Little bit of head canon, but for the most part, this is canon. Hope you don't mind tl;dr! Sup strike-outs, s'been a while.
Body and Appearance

Himuro is 6'2 (188 cm) and 154 pounds (70 kg); practically a twig.
2. How old is he?
He's 27 at the start of the game, so by endgame, he is 30 years old.
3. Describe his posture. Does he carry himself well or does he slouch?
Oh, he carries himself well. The man's all-business and he wants to make sure that his students and colleagues know this.
4. How is his health? Is he fit or out of shape? Any illnesses or conditions? Any physical disabilities?
Oh boy, THIS GUY... umm, I suppose he could somewhat be considered out of shape? He eats on a strict diet that could be considered healthy, but he's never been seen exercising. In fact, he admitted to PE being his worst subject in high school. He has no illnesses or conditions, but he is near-sighted enough to need to wear glasses almost all the time.
5. How does he move? Is he clumsy, graceful, tense, fluid?
His movements are noticeably tense and he moves with business, though that can change if his pet student is around (YMMV of course, he could either be more relaxed around her or more tense, depending on the situation).
6. How attractive is this character physically? How does he perceive himself in the mirror?
Hoo boy. Himuro is attractive, very much so. But the problem with him is that he is also frightening. He has the nastiest glare that will easily make you cower in fear if you get him on his bad side. Himuro doesn't particularly care about his attractiveness, but he does care about keeping a professional image.
7. Describe his complexion. Dark, light, clear, scarred?
Light and clear.
8. Describe his hair: color, texture, style.
His hair is lavender. I don't know how this makes sense, but his hair is naturally lavender and is perpetually in a neat coiffure.
9. What color are his eyes?
Green! A very pretty forest green.
10. Does the character have any other noteworthy features?
Black suit and glasses that seem a tad too big for his face. Just a tad.
11. What are his chief tension centers?
I would say it'd be around his head and shoulders, particularly around his temples and between his eyes. Cue bridge-pinching and temple-massaging.
12. What is the character's wardrobe like? Casual, dressy, utilitarian? Bright colors, pastels, neutrals? Is it varied, or does he have six of the same suit?
Professional and business-y, mostly consisting of dark-colored suits. He does have casual wear that he sometimes wears on his days off and a neat pinstripe suit for formal parties. He's a bit of a fan of collared/turtleneck shirts.
13. Do his clothes fit well? Does he seem comfortable in them?
They fit him pretty well. And, well... if they weren't comfortable, then he wouldn't be wearing them, would he?
14. Does he dress the same on the job as he does in his free time? If not, what are the differences?
Most of the time, yes. Rarely he'll step out of his crisp, black suit and when he does, it's usually because he's hanging out with his buddy Masuda and he forced the poor nerd out of it or because he needs to get comfortable while grading papers.
15. You knew it was coming: Boxers, briefs or commando?

Speech
1. What does this character's voice sound like? High-pitched, deep, hoarse?
Oh goodness,
HIS VOICE. He has a deep voice that's usually spoken in a snapping, no-nonsense tone. He speaks the way he does because he wants to keep authority in his classroom and show his students that this son-of-a-bitch means business. Many girls, though, swoon at the sound of his voice, almost as though they were getting ear-gasms, and wonder how it'd sound if he and they were in a more "intimate" situation.
TL;DR: his voice is deep and all business, but it's also the kind you could only WISH to hear in the bedroom.
2. How does he normally speak? Loud, soft, fast, evenly? Does he talk easily, or does he hesitate?
He speaks evenly and with authority. You will never hear a hesitating tone from him unless you're really close to him.
3. Does the character have a distinct accent or dialect? Any individual quirks of pronunciation? Any, like, you know, verbal tics?
He has something of a verbal tic: usually if he ends an explanation or if he wants to end a conversation, he'll sharply say, "That is all."
4. What language/s does he speak, and with how much fluency?
Besides the usual NIHONGO-DESU, he speaks English pretty fluently, and can speak/understand some Spanish and German.
5. Does he switch languages or dialects in certain situations?
He usually has a need to speak a different language if he's assisting a student of his in translating a piece of text or if he's helping a foreigner with directions. Otherwise, ehh not really.
6. Is he a good impromptu speaker, or does he have to think about his words?
He's somewhere in between: he does think about his words, but that doesn't mean he's slow in, say, verbally reprimanding a misbehaving student.
7. Is he eloquent or inarticulate? Under what circumstances might this change?
I'd say he's eloquent... unless Ayu's involved.
Mental and Emotional
1. How intelligent is this character? Is he book-smart or street-smart?
BOOK-SMART. HEAVY BOOK-SMART.
Street-smart=almost non-existent.
2. Does he think on his feet, or does he need time to deliberate?
He's definitely a deliberater.
3. Describe the character's thought process. Is he more logical, or more intuitive? Idealistic or practical?
Scientific facts, let him show you them. He has a more logical thought process and can be considered more practical than idealistic. Facts over opinions, after all.
4. What kind of education has the character had?
Pretty damn good education if he's regarded as the smartest and most reliable teacher in Habataki Academy.
5. What are his areas of expertise? What, if anything, is he interested in learning more about?
He knows everything ever He's well-versed in playing piano and billiards and driving his car to rival professional drag racers. I'd say he's decent in mechanics too and that he'd like to learn a little bit more, if only because he wants to take better care of his second love car.
6. Is he an introvert or an extrovert?
HEAVY introvert.
7. Describe the character's temperament. Is he even-tempered or does he have mood swings? Cheerful or melancholy? Laid-back or driven?
He's even-tempered and VERY driven. I wouldn't say he's melancholy, but moreso serious.
8. How does he respond to new people or situations? Is he suspicious, relaxed, timid, enthusiastic?
He can be a little enthusiastic, but he's pretty used to meeting new people; he works as a high school teacher, after all.
9. Is he more likely to act, or to react?
Act.
10. Which is his default: fight or flight?
Fight. But, uhh... Just don't expect this guy to throw any fists.
11. Describe the character's sense of humor. Does he appreciate jokes? Puns? Gallows humor? Bathroom humor? Pranks?
he has a sense of humor? One could assume that Himuro has a sense of humor; he did find it amusing that the kids thought he was an android built in the basement of the mysterious church. Try and tell him a joke though, and he will lineface at you.
Himuro will see through your pranks. And he will stop them in it's tracks.
12. Does the character have any diagnosable mental disorders? If yes, how does he deal with them?
None.
13. What moments in this character's life have defined him as a person?
Probably when he first met Ayu. When her first schoolyear started, everything just started spiraling out of control for the poor teacher: she became involved in everything he was involved in, started appearing when he least expected it, and the rest is drama history.
14. What does he fear?
Initially, he feared that his students wouldn't understand his teachings and fail in the real world, causing him to fail as a teacher. Now, you can add losing Ayu for good into the mix.
15. What are his hopes or aspirations?
Really, all he hopes for is that his students will be successful in their own goals, and that they'll apply some of his teachings into their lives.
16. What is something he doesn't want anyone to find out about him?
The side of him that is outside of school: the piano-playing, "drag-racing", generally slightly more laidback version of himself. Also the "dere" side. Ohhh, the general "DNW" of his students finding that he has a softer side (one's already found it, and look where it's gotten him not that he's complaining much).
Relationships
1. Describe this character's relationship with his parents.
He stays in regular contact with them, so I'd say it's pretty good.
2. Does the character have any siblings? What is/was their relationship like?
Only child.
3. Are there other blood relatives to whom he is close? Are there ones he can't stand?
His younger cousin, Itaru Hikami (of TMGS2 fame). He likes the boy and regularly tutors him and takes him out to stargaze, which is Itaru's favorite pastime. In exchange, he receives HUGE bouquets from him, cleverly addressed to "0123" (REI-ICHI-NII-SAN)
4. Are there other, unrelated people whom he considers part of his family? What are his relationships with them?
None that immediately come to mind.
5. Who is/was the character's best friend? How did they meet?
Yoshihito Masuda, a local bartender and his childhood friend. They have a sort of "red-oni-blue-oni" relationship and they don't agree with things most of the time, but Himuro wouldn't trade him for anything. As for how they met, they had the same homeroom class throughout elementary school and Masuda just loved to pester him. The rest is history.
6. Does he have other close friends?
Nope. This poor guy was a lonely nerd.
7. Does he make friends easily, or does he have trouble getting along with people?
People have trouble getting along with him, mostly because of his intimidating aura.
8. Which does he consider more important: family or friends?
He's tied between the two, though I could see him leaning more towards friends.

No kids. As for if he wants them or not... let's just say they aren't exactly the first thing on his mind. he deals with them enough at the school.

Saitou-kun. Probably not; most people fear him more than they do hate him.

I would say he is a 0, SLIGHTLY leaning towards 1.

This guy is a literal 30-year-old virgin. He has been abstinent throughout high school and his young adult years and plans to STAY that way until there is a nice little silver band on his and his significant other's left hand. Let's see how long that lasts...
17. What are his turn-ons? Turn-offs? Weird bedroom habits?
I... fdsajhksad IDEK. He goes "dere" over the innocent types (SCORPIO) and is "kuu" with everything else.
Also: weird bedroom habits whaaaaat.
Beliefs
1. Do you know your character's astrological (

He is a Scorpio and a Tiger! And goodness, does he fit his western zodiac to a T! From the basic traits about them being wise beyond their years to everything that is noted down in
Sextrology, you can match it to Himuro in some way (especially about a male's turn-on being innocence).
His Chinese zodiac, ehh... not so much. He kind of fits into the whole leadership, knowledgeable, and stubborness traits, but it isn't a choice that I would immediately associate Himuro with.
2. Is this character religious, spiritual, both, or neither? How important are these elements in his life?
Neither. Himuro firmly believes in scientific fact and is not particularly a big fan of fairy tales.
3. Does this character have a personal code of morals or ethics? If so, how did that begin? What would it take to compromise it?
4. How does he regard beliefs that differ from his? Is he tolerant, intolerant, curious, indifferent?
He's tolerant, but he makes it obvious that he doesn't quite agree with their views.
5. What prejudices does he hold? Are they irrational or does he have a good reason for them?
Daily Life
1. What is the character's financial situation? Is he rich, poor, comfortable, in debt?
I'd say he's comfortable. A teacher's paycheck isn't really that big, even though he teaches at an established academy and he really doesn't spend all that much.
2. What is his social status? Has this changed over time, and if so, how has the change affected him?
He's about middle class. When he was younger though, he was upper class due to his parents being musicians (because, really, how does a teacher own a Maserati?). Despite this, Himuro really didn't ask for much and the transition to the lower level was an easy one.
3. Where does he live? House, apartment, trailer? Is his home his castle or just a place to crash? What condition is it in? Does he share it with others?
He lives in a pretty spacey apartment that is kept neat and tidy every day with only bare necessities. He lives by himself, though he does have a separate guest room set up in case Masuda any guests want to stop by.
4. Besides the basic necessities, what does he spend his money on?
Rarely anything. He's not that big on frivolties, though he will buy a gift or two for his loved ones.
5. What does he do for a living? Is he good at it? Does he enjoy it, or would he rather be doing something else?
He's a math teacher at Habataki Academy, and considering he's well known to be the most reliable teacher for getting a correct answer on anything, I'd say he's pretty darn good at his job. He does enjoy being a teacher very much, though the rebel students leave something to be desired...
6. What are his interests or hobbies? How does he spend his free time?
Besides grading assignments? He plays piano, goes out on drives, and chills at Masuda's bar.
7. What are his eating habits? Does he skip meals, eat out, drink alcohol, avoid certain foods?
Oh boy, Himuro's eating habits. One thing Himuro is VERY well-known for is his SUPER strict diet: half a grapefruit, 500 ccs of milk, six celery sticks, four slices of rye bread, 100 grams of cheese, and vitamin supplements. He eats this EVERY DAY WITHOUT FAIL AND NEVER GETS TIRED OF IT. Of course, Himuro does responsibly drink alcohol (you expect him to be pals with a bartender and not have some shots?) and he even knows some good vintage. He avoids greasy foods like the plague and will rarely indulge in any sort of snack fare, if not avoid it at all costs.
But really, considering his diet? It's no wonder how he's so damn thin.
