Good for you for being brave and working this out and sticking to it. It looks reasonable to me; can you save some of it for snacks if it's really stressing you out?
A good and sturdy breakfast can help me even out for the day too though, so that might be the one to keep how it is and maybe split lunch in two if it's a lot to deal with?
