There's really only three reasons LiveJournal and other such blog-type things exist; kvetching and/or droning on about your life, pissing other people off by starting arguments about anything and everything and posting the results of online quizes and "personality" tests. Because I have indulged in all three of these with frightening regularity I'm not gonna say which is best (although I'm leaning towards the pissing people off one). Just do a search of interests and/or start going through the interests and channels that your friends are in and just start typing. As for what channels there are, if you can think of it, there's one for it. And in the unlikly event that there isn't, just start it yourself.

Oh, by the way, I figure you knew Cindy was on as sinless and Jenn was darkmom. Don't know if Al, Leah, Jules or Lomax are on, but they should at least make profiles so we can all say, "Hey! We have LiveJournal accounts! Now get me a latte, bitch!"
