I believe Gastly evolves into a Haunter and Pidgeotto evolves into a Pidgeot. I'm not completely sure about Gastly, but I am certain about Pidgeotto evolving into a Pidgeot.

Hmmm, I don't believe there aren't any type of pokemon who is weaker or stronger. It mostly depends on how much you really know your pokemon. For example, knowing all of it's strengths and weaknesses and figuring out a way to overcome those weaknesses. A high level pokemon of any type can cause serious damage. But if you're searching for anything in particular, I suggest you find a rock, steel, or fire type. One of the three or all of them will be a great asset to your team.

Too bad fire types aren't as easy to find. I've only seen two fire types before and they were other people's starters. But I'm sure you'll find one. Maybe someone won't mind breeding you a fire type or trade one of your pokemon for one.
As for types... well, isn't that a matter of preference? You say "lame like water," but... well, trying using an attack like Surf or Hydro Pump in battle, and your mind could change about the power of a Water type.
