I feel very pleased with my culinary prowess today so I thought I would post some recipes.


Hearty Meatless Breakfast Burritos
approx 3/4 cup of chopped onion (medium onion)
1 tbsp minced garlic
1 tbsp chili oil
6-8 oz meatless sausage (I use 2 of Field Roast's Mexican Chipotle sausage)
approx half a can of black beans
1 pint of Egg Beaters
1 package of small tortillas
shredded cheese to taste
sour cream to taste
Saute onions and garlic in chili oil (if using a bland sausage like Morningstar Farms, add some cayenne and chili powder, hot sauce, or preferred source of "kick"). Cut/mash sausage into small pieces and add to skillet with beans. Simmer and stir till warmed through, then turn heat up to medium-high. Add entire pint of Egg Beaters or equivalent eggs. Mixture will be quite wet. Turn periodically until it dries out and starts to form clumps. Use spatula to break up any large clumps, then form burritos using tortillas, adding sour cream and cheese as desired. I freeze these and heat them up for weekday breakfasts (about a minute in the microwave) Makes 10 if you use small tortillas.


'Jerk Chicken' Burgers
This was inspired by Red Robin's "Jamaican Jerk Chicken Burger". I know it's not real Jerk Chicken but I like the combo of spicy and sweet
Marinate Chicken breasts in: Lime Juice, minced or pureed ginger, Johnny's Jamaican Me Crazy Sea Salt (or salt & pepper), thyme, cayenne to taste.
Grill or broil chicken breasts.
Meanwhile in small saucepan boil pineapple juice, brown sugar, cinnamon, allspice, nutmeg. Carefully keep at high boil for a few minutes until it reaches the consistency of warm maple syrup. Turn off the heat but leave the pan on it. It will reach the right thickness by the time it cools enough to eat. Grill pineapple slices if desired. I serve this chicken with the pineapple slices and sauce on King's Hawaiian buns with Pepper Jack cheese. I also make an aioli using mayo and Acadian's Honey Ancho sauce
