I just finished my second ever batch of mozzarella cheese.  it is MUCH better than the first attempt.

I finished making it. It's in the fridge. It doesn't have to age like other cheeses.

I'm making stuffed mushrooms for one of our Christmas celebrations tomorrow. The mozzarella will be shredded over the top of the mushrooms.

Mine was a little dry, but the flavor was pretty good. I'm going to try to get some buffalo milk to make buffalo moz.

Heat up a gallon of milk and citric acid. Add rennet. Milk will thicken and "set up". Drain off the whey. Heat it in the microwave and stretch it until its shiny, like taffy and POOF, you have cheese. Its kind of fun. I'm going to see if I can get some farm fresh milk next time.
