So this evening I was struggling to make things out of scratch and I didn't have enough tortillas to make enchiladas, so I made this recipe thingy up. It's delicious! Enjoy!
Taco Casserole
2 (16 oz.) cans of refried beans
1 cup of salsa (I prefer chunky)
2 tortillas (I prefer low carb wheat)
2/3 bottle of Pace Enchilada sauce (16 oz. bottle)
8 ounce package of shredded cheese
1. Preheat oven to 350 degrees.
2. Take a 8"x8" square pan or 9" pie pan and place one tortilla on the bottom, flat.
3. Take one can of refried beans and spread them evenly over the bottom tortilla.
4. Pour and spread the salsa.
5. Spread the second can of refried beans evenly over the salsa.
6. Place last tortilla flat on top and spread desired amount of enchilada sauce on the tortilla.
7. Put casserole in the oven. Add cheese after twenty minutes cooking time.
8. Cook for another fifteen minutes. Take out and let it cool for five minutes.
9. Add desired toppings like sour cream or olives.
Variation: I thought this recipe might be good if taco seasoning is mixed in with the refried beans. Yumm...
Makes six servings. Prep time:7 minutes. Cooking time: 35-40 minutes.
