This is one of those hodge-podge recipes where I used one recipe as a loose guideline and then did the rest 'by ear' so to speak.
Golden Curry Sauce/Dinner
1 can of coconut milk (14 oz.)
1 Tablespoon fish oil (don't let the smell daunt you)
1 Tablespoon of brown or white sugar
A pinch of grated/powdered ginger
3 Tablespoons of curry powder
1 pound of cut up meat and/or vegetables
Mix in the first five ingredients in a skillet on medium-high. Stir occasionally until it gently boils.
Turn down to medium heat and add meat (If adding veggies skip to instructions on veggies). Put on lid, cook until the meat is thoroughly cooked (this takes about 45 minutes). Add vegetables and cook for another fifteen minutes or until soft, while keeping the lid on. Serve hot.
Servings: 6-8
