This ice cream is flavored with Samuel Smith's Oatmeal Stout and Black Currants and is possibly the best beer flavored ice cream ever. Even some beer haters like it.
2 cups organic half & half (Trader Joe's preferred)
3/4 cups sugar
6 large egg yolks
1 cup Samuel Smith’s Oatmeal Stout
2 tbsp black currant preserves (preferably St. Dalfour)
3/8 tsp vanilla
1/8 tsp salt
Heat the half & half to almost boiling. Cream egg yolks and sugar together. Add some of the milk mixture to the eggs and sugar to temper the eggs, then add the eggs mixture to the hot liquid while whisking constantly. Stirring constantly over medium heat, continue until the mixture coats the back of a spoon. Then turn off flame and add the beer, preserves, vanilla and salt. Stir for a couple of minutes more. Puree fine in a blender. Strain through a fine mesh to remove any solids, pressing if necessary. Refrigerate for at least 4 hours and then process in your ice cream machine.
