Howdy, everyone, it's been awhile!
I wanted to share the super easy and tasty dinner I made the other day. Now, I am in love with pulled pork sandwiches but have only had them a few times because I'm afraid that they may take over my dreams, lol. I decided to try making them at home and was surprised at how extremely easy it was.
Ingredients:
Pork shoulder/butt roast (our was about 4 lbs)
Seasonings that you're fond of
At least one bottle of BBQ sauce of your choice (we used about 1 1/2 of Jack Daniels Hickory Smoked)
A crock pot

I read a lot of recipes that called for marinating the roast overnight in things like root beer, coke, ginger ale, or all sorts of rubs, but that seemed kind of weird to me and in the end I forgot to do it, so my roast went into the crock pot naked as the day it was carved off the pig. I filled the cooker about halfway with water (mine is quite a large slow cooker) so that it almost covered the meat. I did add a few shakes of onion flakes and some Lawry's Seasoning Salt. I set it on Low and went to work.
Roughly 7 1/2 hours later I got home and pulled the roast out with my giant roasting fork, dumped out the water, and used tongs to shred the meat back into the crock pot while holding with the fork. This made it easy to avoid all the fat/connective tissues and big veins that were left. Once it was all shredded in and the dog thought she'd died and gone to heaven from the tiny chunk of fatty meat I allowed her, I added an entire bottle of the BBQ sauce and stirred it all up. I let it simmer on Low for about another hour and a half to really get the BBQ sauce flavor into the meat. Before serving, I poured some more BBQ sauce in there because we like saucier sandwiches.
When ready to serve, we scooped a generous amount onto a toasted sesame seed bun and voila! Delicious and really pretty inexpensive BBQ pulled pork! This made about 8 sandwiches, but for normal people might make ten, haha :D
