One way to use up your lemon curd is to fill cupcakes with it. Make vanilla cupcakes (or something else that you think would go with the lemon). After you've baked them and let them cool, cut a little divot out of the middle, and spoon in a bit of curd. If you want to go super-lemony, stir in some lemon juice and zest into your vanilla cupcake batter. Or make a lemon buttercream or cream cheese frosting, and stir in some of curd. Or all of the above!
Shortbread cookies with a lemon curd thumbprint (or a sandwich cookie with lemon curd in the middle) also work really well, if your curd is pretty stiff.
I had considered the cupcake route, but I guess I'm kind of cake-d out..with good reason - it was my SO's birthday last week and we not only had a ridiculously chocolate-filled cake I made him, but we had a huge section of sheet cake that his work bought for him as well. SOOO much cake! ha! We ate cake every day for a week. Not even kidding! Actually, we froze some of the sheet cake, but there was still a ton of it
