recipe : sunomono

I love cucumbers. I love the cool crunch and the delicate flavor and the seemingly endless things you can do with them, not the least of which is pickles. These are a kind of quick* japanese pickled salad (sunomono means "vinegared things") that makes a delicious side for a light lunch.

I *love* cucumbers too...

They make a cucumber kimche in Korea...it's really good (if you like Kimche) ;)

My mom makes a similar salad. Adding sour cream to the mixture also adds a certain something. I love this stuff in the summer because it's sooo nice and cold and refreshing. Letting it sit overnight is the best though :)

interestingly, I didn't finish it the first day like I normally do, and it was easily ten times better the next day. yay, good leftovers =)
