But where are you? I think the location question was an important one. I've just done a web search and can only find one supplier here in the UK, and that's a company specialising in importing Mexican ingredients. On the other hand, if respondents live in Texas they're much more likely to have encountered Mexican ingredients!
I'm in the US (Virginia now). When I lived in Texas, I'd heard of epazote, but didn't get a chance to try it until I grew some myself 7 or 8 years ago.
To me, it's not the location of the responder, it's the familiarity with recipes and ingredients called for in recipes. There are lots of things in East Asian and South Asian recipes that I've had to substitute or do without, but I'm at least *aware* of them.
Although, I may be an aberration. Some friends called me the most detail oriented person they ever met just because I paid attention to what I read and heard and even remembered some of it!
Lol. We're doing a survey of grocery stores in the Twin Cities (Minneapolis, St. Paul, and suburbs) and in spite of a large latin american immigrant population, we've only managed to find it at Penzey's and one Mexican grocery store.
