Martha & the Muffins - Echo Beach. Ooh, I see what you did there! ;-)

While I remember, is the recipe for those yummy chocolate brownies you made for childeric's party online anywhere?

Brownies; Thoroughly grease the most non-stick tin you have. Pre-heat oven to GM 4, 150oc.
In a pan, melt 3 oz dark chocolate with 4 oz butter.
When melted, beat thoroughly and allow to cool a little. Add 8oz sugar, 2 oz plain flour, 1 teaspoon baking powder, a pinch of salt and two eggs. Combine, and add 4 oz chocolate chips (or 4 oz mixed toasted nuts if you prefer). Pour into the greased tin, bake for about 30 mins.
When they come out of the oven, leave them to cool in the tin for a while, as the middle tends still to be squishy.

I usually do a double batch, partly because I don't have a baking tin small enough for a single batch!

Hope they work out!

Echo Beach - Martha and the Muffins.

I'm pleased to see your muffin recipe is actually reasonably low fat!

As cake recipes go, it's not too bad, especially as, if you use sunflower oil, most of the fat is polyunsaturated!
You could probably make it healthier by using some brown flour or oatmeal, to make bran muffins.

Bloody hell, you can't say the same for the brownie recipe!

*heh* No; when my mum first gave me the recipe, I thought there must be a mistake in the amount of flour vs sugar, but it's right; that's what gives them the chewy/crunchy texture.
But no, not really diet food.

Hurrah, I have been wanting a chocolate muffin ever since I read this post this morning. And now I've managed it, albeit a small and slightly inferior muffin from Bakers Oven.

Small, achievable, chocolatey goals rule :)
