Recipe looks fine. One thing I'd do differently is char the skin off the pepper. There's even Veggie Chorizo-a-likes these days.

I like to use roasted pepper strips with some softened onion and a few sliced black olives and a good splash of olive oil as a kind of 'warm salad' to go with potato & onion tortilla.
