You don't lack proper skills! When I was fine-tuning my CV for job applications I ended up with a solid summary of what my anthro degree was about and all the things I learnt, and made it sound pretty impressive/useful/relevant to jobs. Then above that you could find loads of skills & experience in your waitressing work, the Vice internship... Don't knock yourself!
