I made pizza today!
Recipe for the crust:
17.5 oz. bread flour
1/4 tsp instant dry yeast
12 oz. water
2 tsp salt
Make sure the water is warm and add the yeast to the water to hydrate it. Mix that in good and get all clumps out.
Mix the flour and salt together so that they are combined.
Put the salt and flour mixture into your mixer with a dough hook attachment or if you don't have a mixer put it in a suitably sized bowl.
Add your yeast and water mix to the flour and set the mixer to low speed for 3 minutes or gradually add the yeast mixture into your flour until you have all the water in it and it's pretty well hydrated and feels pretty sticky.
Let the dough rest for 10 minutes covered with plastic wrap in a lightly oiled bowl.
The dough should have risen a bit.
Take the dough out of the bowl and mix on medium speed for another 3 minutes or knead until the dough become elastic.
To figure out if the dough is elastic enough do the window pane test.
http://www.wildyeastblog.com/2007/07/07/gluten/Time to proof! Set the dough is a bowl and cover it with a hot wet rag. Make sure it covers the whole top of the bowl. I'd give it about 20 minutes give or take a few.
You'll need to prepare a sheet tray or pizza stone for this. Spread out some flour on your work area and be pretty generous depending on how dry or wet your dough is. More flour will dry out the dough but you'll need enough so it doesn't stick to your hands and tear.
Pull off a chunk that can fit in your hand if you want a personal pizza or cut the dough in half for a family size.
Push your dough out from the center and work your way out. Don't make it too thin or you'll get holes in it.
Now you just need to add whatever to make your perfect pizza!
I like very little tomato sauce and plenty of cheese.
Don't get to heavy with your toppings or else the pizza won't cook evenly.
If you want thick crust dock your edge by rolling them in a bit and "blending" the seam.
That's about all I can do from memory. Toppings are a whole new thing. Just cooked your toppings before putting them on the pizza! Meats specifically!

I had another that had sundried tomatoes instead of sauce and it tasted good except I used asiago cheese and it was just waaaay to salty with that cheese.
In other news I'm fucking excited about getting my alice nine shit! I'm gonna get a poster of the band AND a mini of my fav member and there's a chance that the poster will be signed!!!!!!
