I'm glad he's willing to work with you to make you happy. The non-wood-working me just thinks he can sand the center piece down so its more flush with the rest of the door, but what do I know. ;)
Yeah - someone on cc said the same thing, but I'm nearly certain it needs to be remade. I'm sure it would be impossible to get even by hand, and it would not be able to be planed down in a machine.
If wood glue weren't so strong, I bet the center panels could be replaced. But a properly made wood glue bond is actually stronger than wood itself.
I'm glad he thinks he'll be able to fix the doors. I completely understand how you feel about wanting them to look right. The old ones don't look at ornate as the new.
All those photos are making me miss my apron front sink.
