I have this problem on an ongoing basis as well. Ordinarily I'm pretty blase about being socially awkward, but when I have an interest in some girl I start analyzing everything I do or say to that girl.
Through my (limited) experience I have resolved that the best path is to just make your interest known and be done with it (either way). Earlier this year I spent two weeks overanalyzing every interaction I had with a girl in the lab at work, whom I was interested in. That way lies madness, and it really is just stress you don't need.
Just do it. If she says yes, you're off to the races, and if she doesn't, it's over with and you don't have to think so hard on everything you do/say in front of her.
I must agree with my colleagues. I have a habit of just asking a gal out to dinner when I find her absolutely charming. If she blows chunks, it wasn't meant to be, but I have never been slapped.
Then again, there is always that time when she does in fact agree, and beautiful things happen.
