So, I want to do more crock pot meals. I'd also like to do more vegetarian meals. Problem is, I don't know that many vegetarian crock pot meals. I know that some of you do, so I turn to you for help.

I'm a huge fan of crock pot veg chili, and crock pot indian food. That's the easiest way to do it. I really like throwing a can of coconut milk in with chickpeas, carrots, sweet potatoes, and lots of spices. Mmmm. Such a yummy food.
Carrots, onions, and celery always go well with a dry bean also.
Chillies and curries and stews (lentils + carrots + onion + green pepper + potato). I also invested in two vegetarian crockpot books: this one and this one. The second one has tastier (but sometimes more fattening) recipes, the first has more vegan recipes. Both make for a good mix.
