Conversational ticks amuse me, partially because I recognize my own.
One that's been particularly entertaining for me lately is my TA's. He tends to smack his tongue against the roof of his mouth while he collects his thoughts. I like to imagine that it's something he developed to avoid saying "um". I prefer "um" to smacking. I've heard several sophisticated speakers say "um". No, it's not the best conversational crutch to use, but at least it can be inserted into the rhythm of what you're saying. Smacking noises, on the other hand, completely disrupt his delivery, and it makes me think of obnoxious valley girls with their affected speech pattern. ::smack:: Like, ya know? Except...this valley girl is a disgrunted, balding 30 year old grad student with a personal vendetta against Tom Stoppard.

No, that last bit hasn't affected my opinion of his smacking in the least ;)
