that looks really satisfying. im jealous of your cast iron/dutch oven.

i kinda dont see the big deal of why no kneading is so revolutionary. you can save hours of proofing time by kneading for 5-10 minutes. and if you want a deep yeasty flavor just make a sponge the day before.

how was it the next day?

Yeah, kneading isn't a big deal for me since we have a Kitchenaid mixer. I love the dough hook. I just think a lot of people are very afraid of kneading which explains the proliferation of bread machines.

I need to get a new sponge started. I had one last fall/winter/spring and made dozens of loaves of sourdough out of it but I let it die.

Oh, and I think it's better today. The crust has softened a little bit but the bread is still very chewy.
