Re 3: (Pun noted) When I have recorded chorus, I have had times where a particular voice was far "louder" in the recording than it was in person (the recorder was in the same place I was). I think that some recorders pick up some frequencies more strongly than others (particularly if it is a cheaper recorder;-) The strings idea makes sense, as well.
Re: 1. Yep, knew that. Never understood it till I started playing 'harpa, and now I speed up noticeably--to others. Oops. Fabulous 'harpist dude in Seattle taught me to practice things I tend to rush by slowing down, to counter the other tendency. Works great when I do it.
Corollary: now I notice myself rushing when I get too wrapped up in doing something cool playing piano backup. I must have done some of this before and just not noticed. I can rush playing solos, to, but it takes a certain type of difficulty in the tune, where it's playable but with concentration, or where I'm *also* trying to do something a little too fancy with the backup idea. Or just where I'm thinking too hard about what comes next rather than where I currently am.
