Well, today is Father's Day, and since I have been fashioning myself into a decent cook over the past couple of years, I made a sumptuous feast for my dad. While Dad went out for his usual round of golf, I started my preparations early in the afternoon, and wound up working in the kitchen for about four hours. ( Cooking pr0n... )

Dude! My dad loves asparagus too - would eat it every day if he could - and I also hated the stuff for about 24 years. I saw the light just a few months ago, when the culinary go-to person in my life served it roasted in olive oil with salt (and nothing else).

Ooh! Roasting sounds like a fine idea, especially since I don't always have access to a grill. I find that my oven tends to be underutilized anyway. Will try that sometime in the near future.

I highly recommend it. About twenty minutes at 400 or until there are crunchy bits. Drizzle olive oil beforehand, sprinkle salt afterward. (I was even able to redeem frozen asparagus this way once.)
