I can tell you what i forgot that i wish i didn't...
tony and i had some beautiful vow like stuff that I found that we repeated and that Mrs. Reese stated.. talking about love, etc.. whatever..
Anyway... since our wedding was outside, and it was windy, none of the people in the audience(?) could hear a word we were saying.. at all... its really dissapointing, and its the only thing that if i could do it again, thats what I would fix.
See if you can hook up some kinda sound system w/ some mics near you guys so everyone can hear you.
Because I love sharing it, because i wish more people would have heard it.. here is what our ceremony wording stuff was. This might take a couple posts

Is there going to be dancing? You may want to rent one of those floor thingys.
I guess I'd also make sure that whatever favor your using (as goes for anything else on the tables) are weighted somehow so the can't blow away in case of wind, and maybe something to keep the pages in the guestbook from blowing.
See, this is what I needed! My favors will be okay, but now I know I have to figure out how to weight down the placecards. We're getting a dancefloor, but I'm worried about walking over grass during the ceremony.
I don't know what your budget is like, but you can always get those picture holders that havve the coil at the top. You can get them wholesale online for less than a dollar each. Especially if you find a good sale, maybe like .50 each. I suppose it also depends on number of guests.
When we were married outside there was a stone walkway so we were safe with the. The pictures on the lawn beforehand were tricky (but not for me I had ballet flats on - everyone else was wearing heels).
