I have had a serious case of the waffles jones for the past few days, gratification delayed by kitchen plumbing issues, but this morning, we have waffles. I had some ricotta cheese in the fridge-lasagna-making also delayed by the kitchen plumbing-so I mixed a bit of that in the batter along with some lemon and orange zest and a little nutmeg. The
