so i had an acorn squash sitting around that we picked up when we went apple picking, and i needed to use it before the time ran out.
hacked it in half, rubbed it down with salt, pepper, and oil, and then tossed a few cloves of garlic into the seed cavity and roasted for an hour at 400. it was freaking amazing, and well worth the time.
